Raw Vegan Ice Cream Recipes

Cashew ice cream is a great way to enjoy ice cream without consuming dairy products. It is sweet, creamy and made from natural ingredients and preservative free. Just like real ice cream, it can come in a variety of flavours. I have included the top three standard flavours below, but you can always add carob chips or nuts before placing in the freezer to jazz up the ice cream a little.

Vanilla Bean Ice Cream:

Soaking Time: 2 hours
Prep Time: 25 minutes
Chill Time: 2 hours

Ingredients Requiring Soaking:
  • 1 cups of Cashews – Soak for 2 hours​
Dry Ingredients
  • ¾ cup of Thai Coconut Meat
  • 1 vanilla bean, scraped
  • 1 tablespoon of lecithin powder
  • Pinch of Sea Salt
Wet Ingredients
  • 1¼ cup of Water
  • 2 tablespoons of vanilla extract
  • ½ cup of Agave Nectar
  • 1/3 cup of Coconut Oil, warmed to liquid

Directions:
  1. Place cashews, water, coconut meat, vanilla bean, vanilla extract, lecithin and salt into a high-power blender and process until very smooth.
  2. Add the coconut oil and blend again
  3. Place mix in the freezer for chilling or add the mixture to an ice cream maker if you have one.

Chocolate Ice Cream:

Soaking Time: 2 hours
Prep Time: 25 minutes
Dehydrating Time: 2 hours

Ingredients Requiring Soaking:
  • 1 cup of Cashews – Soak for 2 hours


Dry Ingredients
  • ¾ cup of Thai Coconut Meat
  • ¾ cup of cacao powder
  • 1 tablespoon of lecithin powder
  • Pinch of Sea Salt
Wet Ingredients
  • 1 cup of Water
  • ½ cup of Agave Nectar
  • ¼ cup of cacao butter, warmed to liquid

Directions:
  1. Place cashews, water, coconut meat, agave nectar, cacao powder, lecithin and salt into a high-power blender and process until very smooth.
  2. Add the cacao oil and blend again
  3. Place mix in the freezer for chilling or add the mixture to an ice cream maker if you have one.

Strawberry Ice Cream:

Soaking Time: 2 hours
Prep Time: 25 minutes
Chill Time: 2 hours

Ingredients Requiring Soaking:
  • 3/4 cups of Cashews – Soak for 2 hours

Dry Ingredients
  • 2/3 cup of Thai Coconut Meat
  • 2 cups chopped strawberries
  • 1 tablespoon of lecithin powder
  • Pinch of Sea Salt

Wet Ingredients
  • ¾ cup of Water
  • 1 tablespoons of vanilla extract
  • ½ cup of Agave Nectar
  • 1/3 cup of Coconut Oil, warmed to liquid​

Helpful Tips:

Feel free to add chocolate chips or nuts before placing in the freezer to jazz up the ice cream flavor
