Raw Vegan Nachos Recipe

​This is one of my favourite recipes because it makes a delicious meal that is quick and requires very little clean up.

It's also very versatile.

You can make the tortilla chips, or simply buy organic corn chips at the grocery store.  You could also enjoy the fillings with some tomato, lettuce, green onions, green chilli's, and salsa in a burrito or taco. The sky really is the limit!


Plant-based meals are AMAZING and this recipe is a great way to experiment with vegan cuisine. I personal haven`t come across a single person who doesn't love this (the "walnut meat" is especially awesome)!
Tortilla Chips:

Ingredients:
  • 1-3/4 cups flax meal
  • 4 cups of frozen organic corn (thawed)
  • 1-1/3 cups water
  • 2-1/2 tbsp. olive oil
  • 1 tbsp cumin
  • 3/4 small red onion
  • 1 clove garlic
  • 1 tsp. sea salt
  • 1-1/2 tbsp. lime juice
  • 3 tsp chili powder
  • 1/2 tsp. cayenne pepper​

Directions:
  1. Place flax meal in a large bowl. Blend all remaining ingredients except the chili powder and cayenne pepper in a high-speed blender until smooth.
  2. Add flax meal, chili powder and cayenne pepper to the blender and process for 20 seconds. Remove any lumps in the mixture by stirring. Taste and adjust
  3. Spread the mixture on the dehydrator sheet with the spatula to no more than 1/8-inch thickness and place in the dehydrator.
  4. Set a timer for 30 minutes.
  5. Remove the spread after 30 minutes. Using a paring knife, cut and shape into chips in the size you desire.
  6. Sprinkle the chips with sea salt and continue dehydrating until they reach the desired crispness (12-24 hours).
Cashew Sour Cream:

Ingredients:
  • 1 cup raw cashews (must not be roasted or salted)
  • 1/4 tsp salt
  • 1 tsp apple cider vinegar
  • 1 small lemon, juice of
  • 1/3 cup water
Directions:​
  1. Add all ingredient in a food processors and let stand for 15-20 minutes.
  2. Puree for 3-4 minutes or until completely smooth and creamy in consistency.
Walnut Taco “Meat”:

Ingredients:
  • 1 cup of raw walnuts
  • 1 tsp chili powder (add more to taste)
  • 1/4 cup (10) sun-dried tomatoes
  • 1-2 tbsp of olive oil (or oil from the sun-dried tomatoes jar)
  • 1 tsp sea salt
  • 1/8 teaspoon of cayenne powder (optional)
Directions:
  1. Combine ingredients in the food processor and pulse (be careful not to over process or it will look like mush).
  2. Feel free to adjust the spices to your liking.
Quick and Easy Guacamole:

Ingredients:
  • 1 ripe avocado,
  • ¼ cup of green onion
  • 1/4 cup of finely chopped tomatoes
  • 1 tsp of lemon juice
Directions:
  1. Mix all ingredients together with a fork and VOILA!
Final Step: Plate it Up

  1. Dice up some tomatoes, onion and lettuce.
  2. Arrange walnut meat, sour cream, guacamole, tomatoes, onion and lettuce on a plate (sprinkle with some chili powder for presentation ☺ )
  3. Add chips to one side and ENJOY!
